Fry the potatoes
Cube potatoes small, air fry or pan-fry until crisp and golden on all sides. Salt them while they're hot.

Brown the beef in a dry pan with taco seasoning: cumin, paprika, garlic, oregano, chili. Break it up fine.

Potatoes on the bottom, beef on top. Drizzle yogurt. Scatter chives, red onion, tomato if you have it.
